Hi friends! Feeling the crisp fall air yet? I’m about to declare apple and pumpkin season ON 🙂 So.. Ever been in a food rut? I’m sure I’m not the only one who’s guilty of finding a meal I like and having it practically every day. Maybe rut isn’t the right word, though… not if you have it because it’s so tasty and nutritious that you leap out of bed every morning excited to eat it! Have I ever mentioned I love food?
Well, if it is in a rut then I’m currently very happily stuck! I’m excited to share with you a recipe for my favorite breakfast that catapults me out of bed before Madelyn wakes up: Cookie crumble cereal! I mean, even the name is scrumptious. And it’s so. simple. And so healthy!
The only ingredient you may not have on hand is the protein powder. I know I rave about Shakeology, but I always enjoy it as my no-brainer super-lunch. So… I use a regular old plant-based protein powder for this recipe. It gives me a protein punch to start off the day, and I get to check off one of those pesky red container boxes that I have trouble completing. (If you’d like a recommendation for a plant-based protein, I LOVE Sunwarrior! This protein powder is rice-based and seriously.. SO yummy.)
The Stars of the Dish
Here’s what you need: old fashioned oats, a nut butter, a drizzle of local honey, a pinch of salt and cinnamon, vanilla protein powder, & some fresh fruit (or whatever mix-ins you would like to change up the flavor.)
Measure out 1/2 cup of oats (exactly 1 yellow container) and two teaspoons (or as I do, one heaping teaspoon) of nut butter— peanut butter is my favorite in this cereal, the stickiness works perfectly!
*Clean-eating shoppers → look at the ingredients list! Choose a peanut butter with only peanuts and salt listed. You may be surprised how long the list of ingredients is in some brands (& I dare you to pronounce all those chemically names!) My personal fave: Smucker’s Natural. Creamy some days, chunky on others. Ya know, gotta keep it fresh 😉
Add the rest of the ingredients except the fruit. Now’s my favorite part… SMUSH! Take your spoon and mash it all together until it forms a well-mixed crumble.
Add some fresh fruit and ta-da! Cookie crumble cereal. Add unsweetened vanilla almond milk & indulge.
*Prep-aring for success→ pre-wash and cut your fresh fruit so it is ready to drop right into your cereal! Store in an airtight container. Only prep enough for two days at a time, though, it will start losing nutrients when stored any longer.
Oh… this is important: If it’s a special day/ holiday/ finally a sunny morning in England and you feel like celebrating, add a few dark chocolate chips. I mean, YUM. Dessert for breakfast AND Fix-approved is a total WIN!
Y’all. THIS is early morning bliss. Let me know if you try this breakfast & how you like it! Have a great workout today 🙂 Recipe is below.
Get it, girls! xoxo
